Artichoke Squares (U.B.C. – Day 17)

I reverse engineered this recipe from something I had at a Halloween party ten or so years ago.  It was my only option as I never could find out who had made them … a hazard of attending party at which the only people I knew were my sister and her friend.  Little squares of artichoke and cheese heaven.  My cobbled together version tastes a little different than the original, but pretty good nevertheless.  It’s also easy to double the recipe for larger groups.


2 large jars artichoke hearts, diced

1 sleeve Saltine crackers

2 eggs

2 cups grated cheese (your favorite kind)

2 tbsp olive oil

1/2 cup sliced green onions to taste and garnish – I tend to use fewer because I don’t like an overwhelming onion flavor.

Cooking Instructions:

Preheat the oven to 325 degrees Farenheit.

Saute together the diced artichoke hearts and green onions.  Set aside.

Crush the sleeve of Saltines and mix together with eggs.

Add the grated cheese, and the artichoke and green onion mixture.

Place mixture in a pan with sides and bake for 30-40 minutes until done.

Let cool for 10 minutes, then slice and serve.
